American Elderberry Mustard Glaze

Elderberry + Mustard for the WIN!


Are you a mustard fan? Did you know there are thousands of different types of mustards out there in the world? We've seen mustard make a comeback in the restaurant industry in the past few years. You can order hot pretzels and get a flight of different mustards as dip, mustards are the base for many marinades and savory glazes, and we can't forget the magic of a regular, yellow mustard on top of a hot dog at your local county fair either.

Did you know there's a National Mustard Museum?!? Yep. Our owner and founder, Terry Durham visited the museum last year and the whole crew has been enjoying our different flavored mustards since. If you're in Middleton, Wisconsin, be sure to make a stop there! Did you know there are mustards made from spirits, such as champagne and lagers? Fruit mustards and hot mustards? The National Mustard Museum say's they have the world's largest selection of mustards, and they sell online. Of course, I couldn't pass up the opportunity to mix a few of my newfound mustards with elderberry, which led down a whole rabbit hole of experimentation. Although I don't think I ran into a bad combination of mustard and American elderberry, the recipe offered today seems the most accessible and tasty for the masses!

Glaze can be used in a number of ways. If you are grilling, you may use a glaze to add flavor and caramelize the outside of whatever you're cooking. Glaze isn't just for meat! Try this delicious mustard glaze on zucchini, potatoes or brussels sprouts. You can also use this glaze as a marinade. Whether you are cooking on the grill, in the oven or on the stove.


Jelly + Mustard?


The recipe we are learning today uses our River Hills Harvest American Elderberry Jelly. This elderberry jelly is made using our Premium Elderberry Juice. It has been loved on biscuits, peanut butter and jelly sandwiches and more for many years. Although we love the basic uses for jelly, it's been more fun to show you some new places to use our jelly you may not have thought of.


You CAN make an alternate version of this recipe using our Premium American Elderberry Juice instead of the jelly. However, it will make the consistency much thinner, and you won't have the added sweetness the jelly offers. However, mixing the elderberry juice with mustard can be a great application if you are using it as a glaze instead of a dip. You could add honey to thicken it up and add additional sweetness.

American Elderberry Mustard Glaze Recipe


What You'll Need:

  • 1/2 Cup of RHH American Elderberry Jelly

  • 1/4 to 1/2 Cup Coarse Ground Mustard

  • 1 Tablespoon Worcestershire Sauce

  • Add salt, pepper, garlic and onion powders, or freshly grilled onions and garlic to your desired taste.


Mix all ingredients together and chill for at least 30 minutes. Once chilled, brush onto meat, veggies or whatever it is you want to have glazed. I recommend saving some and glazing at the end of your grilling too, then give it some extra heat and let the glaze caramelize.


But it can be a dip too...


This recipe isn't just a glaze; it can also be a great tasting dip! I personally prefer more mustard than jelly when making it a dip, but you do what you want. As a dip, it's best served with pretzels, pita bread or wheat crackers. Great for any gathering of snacks.


Have fun with it and get out there and explore the world of mustards! I say coarse ground mustard in the recipe, but that in itself could mean hundreds of different types of mustards. Get creative and try mixing a mustard with a hot pepper jelly, then add some elderberry. Either way, it's sure to be a tasty hit at your next party!
